My crystal ball speaks...


Many eviscerated deer will be hanging on the Akkerman farm in two weeks time.

I suppose this is a good time to ask the Akkerman clan if there is space to butcher deer anywhere. Toph and I have been planning on doing some every night. I will be outfitting my tailgate with a scrubbable cutting board to use as a counter, but if there were room in a lighted machine shed it would help us all out.

There are a couple of different options. We may use the machine shed, we may also use the hog house, which is smaller but still should be plenty big enough.

Anybody know what the precipitation has been like up there? I'm curious about the water levels in the ponds and how muddy things are.

A thought (most of my thoughts usually end up long, involved and intricate and take a lot of someone elses talent and a sizeable chunk of my Harley Bucks):

Clean and rough-cut meat someplace ( (skinned, heads off, legs off below saveable quarters and all possible damaged portion cut away clean, as little residual hair as possible. Carcus is CLEAN - that is C L E A N (squeeky clean).

We then hang the pieces awaiting butchering in a refrigerated space.

Now comes my idea. My motorcycle trailer, or your old roofing trailer (or both). Empty (lots of clean flatten cardboard available for floor covering. Now comes the problem for your trailer (I think). Get a way to install the smallest you can find window A/C. (on mine, take off the pedestian door, take and make a plywood and strafoam closure that allows you to a/c the interior (regardless of the outside temp). Hang meat at least one day and then move butcherable pieces (which are now locker plant clean and easily moved and cut.

Then we can butcher in most any clean environment.

The same thing can be done using a small farm building, or inside of some other enclosed area, but the moveable unit works well. Fred Haux (Judy RaNell's brother) and I used to use an old slide-in camper shell (dime a dozen) and some huge ass slabs of styrafoarm. We carried the shell on an old pickup box made into a trailer. I have access to an open 2-wheeled trailer (would need a spare if we wanted to take it on the road. This way we could butcher there and still have everything intact so we could buther in Tyndall, Springfield or Yankton.

I know my motocycle trialer will work, but it is not very big and it is just barely 5.5 ft or so high inside. But the pedestrian door can be easily rigged for A/C and a large piece of plastic ends up being a pretty serious interior seal for a/c control and taking the show on the road.
